This book gives detailed information on little known grains and beans as well as the more commonly used beans and grains.  

 

This book provides details on flour alternatives, cereal grains, ancient grains, pseudograins, the new pseudograins, dry beans, fresh peas and beans, the exceptions which refer to alfalfa, carob, jicama, mesquite, peanuts, soy and tamarind.  There is a section on meal planning with recipes as well.

This book will provide you with the uses and details to properly prepare the grains and beans as well as pairing them, nutritional information, allergens, and what to expect taste-wise.  

This book is a wonderful reference book, packed with information for alternative sources of protein, fiber, energy carbohydrates, fiber, flavor and easily grown, sustainable low-cost food source.
